This vibrant dip brings together creamy red lentils and a punchy walnut-basil pesto in a way that feels both fresh and deeply satisfying. The lentils simmer down into a silky base with a warm golden hue from the turmeric, while the rough-blended pesto adds bright, herby flavor and a little welcome texture. Together they create something that tastes far more impressive than the effort involved. Store-bought dips can be a minefield when you're avoiding certain grains, since thickeners and fillers have a way of sneaking in — making a batch from scratch with whole, recognizable ingredients is genuinely the easier path. Every component here is naturally free of barley and grain-based additives, so you can dig in without second-guessing the label. The rainbow of carrot sticks, cucumber, celery, and red bell pepper strips makes this as pretty on the table as it is delicious, whether you're setting out a snack spread or bringing something to share. A final drizzle of olive oil over the top is a small touch that makes it look like it came straight from a restaurant kitchen.

Combine the rinsed red lentils, water, turmeric, and 1/2 tsp salt in a medium saucepan over medium-high heat. Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, until the lentils are completely soft and have absorbed most of the water, about 15–18 minutes. Remove from heat and let cool for 10 minutes.
While the lentils cool, add the walnuts, basil, garlic, olive oil, lemon juice, black pepper, and red pepper flakes (if using) to a food processor. Pulse 8–10 times until the mixture is finely chopped and cohesive but not completely smooth — it should look like a rough, thick pesto.
