This vibrant, creamy dip gets its gorgeous golden-green color entirely from turmeric, fresh basil, and real vegetables — no synthetic dyes, no mystery additives, just whole ingredients doing all the work. Red lentils simmer down into a naturally thick, protein-rich base that blends seamlessly with a rough walnut-basil pesto, creating something that tastes far more indulgent than it has any right to. The lemon juice and garlic keep things bright and punchy, while the walnuts add a subtle richness that makes this feel like a proper party dip rather than a sad health-food afterthought. Store-bought dips and flavored spreads are some of the sneakiest offenders when it comes to hidden colorings, so making your own from scratch is genuinely the easiest way to stay in control of what's on the snack table. Surrounding the bowl with carrot sticks, celery, cucumber, and red bell pepper strips means the whole spread is naturally colorful without a single drop of artificial anything. It comes together in one saucepan and a food processor, making cleanup minimal and the payoff enormous. Whether you're serving kids, guests with sensitivities, or just yourself on a Tuesday, this is the kind of dip that disappears fast.

Combine the rinsed red lentils, water, turmeric, and 1/2 tsp salt in a medium saucepan over medium-high heat. Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, until the lentils are completely soft and have absorbed most of the water, about 15–18 minutes. Remove from heat and let cool for 10 minutes.
While the lentils cool, add the walnuts, basil, garlic, olive oil, lemon juice, black pepper, and red pepper flakes (if using) to a food processor. Pulse 8–10 times until the mixture is finely chopped and cohesive but not completely smooth — it should look like a rough, thick pesto.
