This vibrant dip brings together creamy red lentils and a punchy walnut-basil pesto for something that feels both fresh and deeply satisfying. The lentils simmer down into a silky base, while the food processor does the heavy lifting to blend everything into a smooth, herbaceous spread that's genuinely hard to stop eating. Every single ingredient here is plant-based and free from the mammalian byproducts that people managing alpha-gal syndrome need to avoid — no meat, no dairy, no hidden animal fats to stress over. The pesto layer is where the magic happens: raw walnuts, fresh basil, garlic, lemon juice, and good olive oil come together into something that tastes far more complex than the ingredient list suggests. A drizzle of extra virgin olive oil on top and a rainbow of crisp carrot sticks, celery, cucumber, and red bell pepper strips make this as beautiful to look at as it is to eat. It works equally well as a party spread, a weekday snack, or a light lunch alongside whatever else you have going on.

Combine the rinsed red lentils, water, turmeric, and 1/2 tsp salt in a medium saucepan over medium-high heat. Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, until the lentils are completely soft and have absorbed most of the water, about 15–18 minutes. Remove from heat and let cool for 10 minutes.
While the lentils cool, add the walnuts, basil, garlic, olive oil, lemon juice, black pepper, and red pepper flakes (if using) to a food processor. Pulse 8–10 times until the mixture is finely chopped and cohesive but not completely smooth — it should look like a rough, thick pesto.
