Bright, nourishing, and genuinely craveable, this quinoa salad is the kind of bowl that makes eating well feel effortless rather than obligatory. Juicy mango, peppery arugula, and sweet cherry tomatoes get tossed with a vibrant homemade walnut-basil pesto that comes together in a food processor in minutes. Walnuts are a standout ingredient here — they're rich in omega-3 fatty acids, which are especially valuable when you're nursing and want to support both your own recovery and your baby's development. The quinoa base delivers complete protein and iron, two nutrients that are easy to fall short on during the postpartum months. A pinch of turmeric adds a warm, golden hue and a gentle anti-inflammatory boost without overpowering the fresh, citrusy flavors. Everything is dressed with good olive oil and bright lemon juice, keeping the whole dish light and clean — no heavy cream sauces or processed shortcuts in sight. Torn fresh mint over the top is optional, but it adds a little pop that makes the whole bowl feel like something you'd order at a café rather than throw together on a tired Tuesday.

Combine the rinsed quinoa, water, and 1/4 tsp salt in a medium saucepan over medium-high heat. Bring to a boil, then reduce the heat to low, cover, and cook until the water is fully absorbed and the quinoa tails have unfurled, about 12–14 minutes. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork and spread onto a large plate or sheet pan to cool to room temperature, about 10 minutes.
While the quinoa cools, make the pesto: combine the basil, raw walnuts, garlic, lemon juice, 1/4 tsp salt, and black pepper in a food processor. Pulse 8–10 times until coarsely chopped. With the machine running, drizzle in the 1/4 cup olive oil and process until the pesto is mostly smooth with a little texture remaining, scraping down the sides once.
