This vibrant skillet is the kind of meal that feels indulgent while quietly checking every box you need it to. Tender asparagus, jammy cherry tomatoes, and perfectly cooked eggs come together in one pan, then get finished with a bright, herbaceous walnut pesto that ties everything together beautifully. The pesto itself is made from scratch with fresh basil, raw walnuts, garlic, lemon juice, and nutritional yeast — no cheese, no sugar, no shortcuts — so you know exactly what's going into it. Walnuts pull double duty here, blended into the pesto base and toasted separately for a satisfying crunch on top, adding healthy fats and depth without anything that would throw off a carefully managed eating plan. Cherry tomatoes and asparagus keep the vegetable side clean and naturally low in starch, making this a genuinely filling plate that doesn't rely on grains or anything processed. The whole thing comes together in a single skillet, which means less cleanup and a dinner that looks far more impressive than the effort involved. Spoon it straight from the pan and finish with a few fresh basil leaves for a meal that's as pretty as it is purposeful.

FIELD DAY OLIVE OIL EXTRA VIRGIN

Make the pesto: combine the basil, 1/4 cup of the walnuts, garlic, nutritional yeast, lemon juice, and salt in a food processor. Pulse 5–6 times until coarsely chopped. With the machine running, drizzle in the 1/4 cup olive oil and process until the pesto is smooth but still has some texture, about 30 seconds. Set aside.
Toast the remaining walnuts: add the reserved walnuts (about 1 tbsp plus 1 tsp) to a dry 12-inch skillet over medium heat and cook, stirring frequently, until fragrant and lightly golden, 2–3 minutes. Watch closely, as they can brown quickly. Transfer to a small plate and set aside.
