Salty-sweet, minty, and deeply chocolatey, this popcorn is the kind of snack that disappears faster than you'd expect. The coating comes together with coconut oil, maple syrup, and cocoa powder — no refined sugars, no mysterious additives, and absolutely nothing that would raise a flag for anyone avoiding yeast. That matters more than it sounds, because plenty of flavored popcorn and chocolate-coated snacks on store shelves contain malt, brewer's yeast, or yeast-derived flavorings that can catch you off guard. Here, every ingredient is straightforward and easy to verify. A hit of peppermint extract gives it that cool, festive edge, and the optional scatter of finely chopped dark chocolate melts into the hot popcorn as it cools, creating little pockets of richness throughout. Baking the coated kernels low and slow is what makes the difference — the coating dries out and crisps up beautifully instead of staying sticky. Break it into clusters, pack it into a bowl, and try not to eat the whole batch before anyone else gets to it.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
