Chocolate, mint, and popcorn might sound like a snack-bowl fever dream, but this baked treat is genuinely one of those recipes that disappears faster than you can bag it up. The cocoa coating comes together with coconut oil, maple syrup, and a hit of peppermint extract — no stabilizers, no thickeners, nothing you'd need to second-guess on a label. That matters more than it sounds, because xanthan gum quietly shows up in a surprising number of packaged snacks and even some cocoa-based coatings, so making this from scratch puts you fully in control. A low oven and a halfway stir are all it takes to turn glossy, coated kernels into something crisp and deeply chocolatey. The optional scatter of finely chopped dark chocolate over the hot popcorn at the end melts just enough to create little pockets of richness throughout. Once it cools on the pan, it breaks into satisfying clusters that are equally at home in a holiday tin or a movie-night bowl.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
