Popcorn is one of those snacks that feels indulgent but comes together with surprisingly humble ingredients, and this chocolatey, minty version takes it somewhere genuinely special. The cocoa coating is built from coconut oil and maple syrup, which bake down into a glossy, crisp shell that clings to every kernel — no corn syrup, no mystery additives. A hit of peppermint extract gives the whole batch that cool, refreshing contrast against the deep bitterness of the cocoa, and the optional scatter of chopped dark chocolate melting over the hot popcorn right out of the oven is absolutely worth it. Baking the coated kernels low and slow is the move here — it sets the coating properly so you get satisfying crunch instead of a sticky mess. Everything in this recipe is naturally free of rice and rice-derived ingredients, so there's no need to scrutinize labels or swap anything out. It's the kind of treat you make once and then find yourself making again every time the holidays roll around — or honestly, any time you want something that feels a little fancy without much effort.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
