Chocolate, mint, and popcorn might sound like an unexpected trio, but one bite of this baked treat and you'll wonder why you haven't been making it for years. The cocoa coating comes together in minutes — just coconut oil, maple syrup, cocoa powder, and a hit of peppermint extract — and it bakes onto the kernels into something genuinely crispy and deeply chocolatey. An optional scatter of finely chopped dark chocolate over the hot popcorn takes it over the top, melting into glossy little pockets as everything cools. Every single ingredient here is naturally free from pork and pork-derived products, so there's no label-scanning or guesswork involved. The whole thing is built on pantry staples, which makes it an easy win for movie nights, holiday gifting, or just a snack that feels a little more special than the usual bag. Let it cool fully on the baking sheet and it crisps up beautifully — then break it into clusters and try not to eat it all before it makes it into a bowl.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
