Chocolate, mint, and popcorn together might sound indulgent, but this treat is surprisingly wholesome once you see what goes into it. The coating is built on maple syrup and coconut oil instead of the corn syrup-laden candy coatings you'd find in most store-bought versions, so you get that glossy, caramelized crunch without any of the usual sweetener concerns. A hit of peppermint extract and a generous whisk of cocoa powder give every kernel a bold, almost brownie-like flavor that tastes way more decadent than the ingredient list suggests. Baking the coated popcorn low and slow is the real secret — it sets the coating into a satisfying crisp shell rather than leaving things sticky or soggy. If you toss on the optional chopped dark chocolate right out of the oven, it melts just enough to create little pockets of richness throughout the batch. This is the kind of snack that disappears fast at a movie night or holiday gathering, and nobody needs to know it came together in under an hour with a handful of pantry staples.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
