Chocolate, mint, and popcorn might sound like a snack mix-up, but one bite of this baked treat will convince you it belongs in your regular rotation. The cocoa coating comes together with coconut oil, maple syrup, and a hit of peppermint extract — no corn syrup, no mystery additives, and nothing that sneaks in gluten. Every kernel gets tossed until fully coated, then baked low and slow so the shell sets into a satisfying, candy-like crunch. An optional scatter of finely chopped dark chocolate melts over the hot popcorn right out of the oven, adding little pockets of richness throughout. It's the kind of snack that disappears fast at a party, and nobody needs to know it took less than half an hour to pull together. Store-bought chocolate popcorn often comes with shared-facility warnings or ingredient lists that require a magnifying glass, so making it yourself with these straightforward pantry staples is genuinely the smarter move. Let it cool completely on the pan and it crisps up beautifully — perfect for gifting in a bag or just eating straight off the baking sheet.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
