Chocolate, mint, and popcorn might sound like a carnival snack, but this baked version is genuinely sophisticated — the kind of thing you make once and then find yourself craving on repeat. The cocoa coating comes together with coconut oil, maple syrup, and a hit of peppermint extract, then gets baked low and slow until it sets into a glossy, crisp shell around every kernel. That oven step is the real secret: it transforms what could be a sticky mess into something that snaps and crackles with each bite. An optional scatter of finely chopped dark chocolate melts over the hot popcorn right out of the oven, adding little pockets of richness throughout. Every ingredient here is naturally free of celery and celery derivatives — no seasoning blends, no store-bought coatings, no mystery additives to second-guess. It's a crowd-pleasing treat that works just as well packed into bags for gifting as it does piled into a bowl for movie night. Once it cools and crisps up, it's genuinely hard to stop eating.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
