Chocolate, mint, and popcorn might sound like a carnival mashup, but this baked treat pulls it all together into something genuinely craveable. The cocoa coating comes together with coconut oil, maple syrup, and a hit of peppermint extract — no dairy, no mystery additives, just clean pantry staples that you can actually read on the label. That matters a lot when you're avoiding carrageenan, which sneaks into countless store-bought chocolate coatings, flavored popcorn bags, and even some dark chocolate chips under the guise of texture improvement. Here, every ingredient is straightforward and easy to verify. A low-and-slow oven bake sets the coating into a satisfying crisp shell, and the optional scatter of finely chopped high-cacao dark chocolate on top adds a melty, glossy finish that looks far fancier than the effort involved. It's the kind of snack that disappears fast at a movie night or holiday gathering, and it stores beautifully once cooled — if it lasts that long.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
