Chocolate and peppermint is one of those combinations that feels festive and indulgent no matter the time of year, and this baked popcorn delivers both in every crunchy, coated handful. The coating comes together from a short list of real, recognizable ingredients — coconut oil, maple syrup, cocoa powder, and peppermint extract — so you know exactly what's going into the bowl. That matters more than it might seem, because conventional flavored popcorn and holiday snack mixes are notorious for hiding synthetic flavor compounds behind vague labeling. Here, the minty kick comes from peppermint extract, and the deep chocolate flavor is built from cocoa powder and optional high-cacao dark chocolate, nothing artificial required. Baking the coated kernels low and slow is what makes the magic happen: the coating dries into a satisfying, crisp shell that clings to every piece rather than pooling at the bottom of the bag. A final scatter of chopped dark chocolate melts slightly over the hot popcorn and sets as it cools, adding little pockets of richness throughout. It's the kind of snack that disappears fast, so consider making a double batch.

Preheat the oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
Heat 1 tbsp coconut oil in a large pot over medium heat. Add the popcorn kernels, cover with the lid, and cook, shaking the pot every 30 seconds, until the popping slows to 2–3 seconds between pops. Remove from heat immediately and transfer the popped corn to the prepared baking sheet, discarding any unpopped kernels.
