These little chocolate cups are the kind of treat that looks like it came from a fancy confectionery but comes together with a silicone muffin pan and a handful of real ingredients. A shell of rich, high-cacao dark chocolate melted with coconut oil forms the base, and a cool hit of peppermint runs through both the chocolate and the fresh fruit-and-nut filling inside. Diced strawberries, halved blueberries, walnuts, and almonds get tossed with maple syrup and a pinch of sea salt before being tucked into each cup and sealed with another layer of chocolate — it's genuinely satisfying to make. Because every ingredient here is naturally free of wheat and grain-based fillers, there's no substituting or label-scanning required; the recipe just works as written. That matters when so many store-bought chocolate confections sneak in wheat-derived thickeners or are processed on shared lines. The optional flaky sea salt finish on top takes the whole thing from good to seriously hard to stop eating. Pop them out of the mold, keep them cold, and they're ready to serve whenever you need an impressive but effortless bite.

Place the chopped dark chocolate and coconut oil in a small saucepan over the lowest heat setting, stirring constantly until the chocolate is fully melted and smooth, about 3–4 minutes. Remove from heat and stir in 1/2 tsp peppermint extract.
Using a small spoon or pastry brush, coat the inside of each cavity of a 24-cup silicone mini muffin pan with a thin, even layer of the melted chocolate, working it about 3/4 of the way up the sides. Reserve the remaining melted chocolate for sealing the cups. Refrigerate the pan for 10 minutes, until the chocolate shells are firm to the touch.
