These little chocolate cups are a genuinely exciting no-fuss treat — cool peppermint-spiked dark chocolate shells packed with juicy strawberries, blueberries, crunchy walnuts, and almonds, all kissed with maple syrup and a pinch of sea salt. Every single ingredient here is naturally free of red meat and the hidden animal-derived additives that can sneak into store-bought confections, so you can indulge without a second thought. The silicone mini muffin pan does most of the heavy lifting, making it easy to build perfectly formed shells that snap cleanly out once set. Melting the dark chocolate low and slow with a touch of coconut oil keeps it glossy and smooth, while two hits of peppermint extract — one in the shell, one in the filling — give the whole thing a bright, refreshing lift that balances the richness beautifully. The fruit-and-nut filling comes together in one bowl with barely any effort, and the optional flaky sea salt finish on top takes these from homemade to genuinely impressive. They keep in the fridge for up to four days, which means you can make a full batch ahead and have a ready-to-grab treat all week long.

Place the chopped dark chocolate and coconut oil in a small saucepan over the lowest heat setting, stirring constantly until the chocolate is fully melted and smooth, about 3–4 minutes. Remove from heat and stir in 1/2 tsp peppermint extract.
Using a small spoon or pastry brush, coat the inside of each cavity of a 24-cup silicone mini muffin pan with a thin, even layer of the melted chocolate, working it about 3/4 of the way up the sides. Reserve the remaining melted chocolate for sealing the cups. Refrigerate the pan for 10 minutes, until the chocolate shells are firm to the touch.
