These little chocolate cups are a genuinely impressive treat — cool, minty, and packed with fresh fruit and crunchy nuts all tucked inside a snappy dark chocolate shell. The magic here is in the layering: a thin coat of melted dark chocolate forms the cup, a bright strawberry-blueberry-nut filling goes in the middle, and then a second pour of chocolate seals everything shut before it all sets in the fridge. Coconut oil keeps the chocolate glossy and smooth without any dairy in sight, and the double hit of peppermint extract running through both the shell and the filling makes every bite feel festive and fresh. Dark chocolate above 70% cacao is naturally free of milk solids, so there's no need to hunt down specialty swaps or worry about hidden dairy sneaking in. The maple syrup ties the fruit and nuts together with just enough sweetness, while a pinch of sea salt — and optional flaky salt on top — keeps things from tipping into candy territory. They pop cleanly out of a silicone muffin pan and hold up beautifully in the fridge for several days, making them just as practical as they are pretty.

Place the chopped dark chocolate and coconut oil in a small saucepan over the lowest heat setting, stirring constantly until the chocolate is fully melted and smooth, about 3–4 minutes. Remove from heat and stir in 1/2 tsp peppermint extract.
Using a small spoon or pastry brush, coat the inside of each cavity of a 24-cup silicone mini muffin pan with a thin, even layer of the melted chocolate, working it about 3/4 of the way up the sides. Reserve the remaining melted chocolate for sealing the cups. Refrigerate the pan for 10 minutes, until the chocolate shells are firm to the touch.
