These little chocolate cups are the kind of treat that looks like it came from a fancy confectionery but comes together in your own kitchen with nothing but clean, real ingredients. Dark chocolate with over 70% cacao forms the shell, and because you're melting it yourself with just coconut oil and peppermint extract, there's no mystery about what's inside — no corn syrup, no glucose-fructose blends, just pure chocolate flavor. The filling is where things get really exciting: fresh strawberries, blueberries, walnuts, and almonds are tossed with a touch of maple syrup and a hint of cool peppermint, creating a bright, fruity, nutty center that plays beautifully against the rich chocolate shell. That combination of textures — snappy chocolate, juicy fruit, and crunchy nuts — makes every bite feel genuinely indulgent. So many store-bought chocolate cups and confections sneak in high fructose corn syrup as a sweetener or binding agent, which makes homemade versions like this one such a relief to find. The maple syrup does all the sweetening here, keeping things naturally sweet without any of the processed stuff. A finishing pinch of flaky sea salt on top pulls the whole flavor profile together and makes these look as polished as they taste.

Place the chopped dark chocolate and coconut oil in a small saucepan over the lowest heat setting, stirring constantly until the chocolate is fully melted and smooth, about 3–4 minutes. Remove from heat and stir in 1/2 tsp peppermint extract.
Using a small spoon or pastry brush, coat the inside of each cavity of a 24-cup silicone mini muffin pan with a thin, even layer of the melted chocolate, working it about 3/4 of the way up the sides. Reserve the remaining melted chocolate for sealing the cups. Refrigerate the pan for 10 minutes, until the chocolate shells are firm to the touch.
