Few condiments hit the sweet-heat balance quite like a homemade pepper jelly, and this version is a genuine showstopper. Red and green bell peppers bring vibrant color and mellow sweetness, while jalapeños add a kick you can dial up or down simply by keeping or removing the seeds and ribs. Apple cider vinegar gives the whole thing a bright, tangy backbone that makes it just as good spooned over cream cheese on a cracker as it is glazed onto grilled chicken. The ingredient list is naturally free of eggs — no substitutions or workarounds needed, just peppers, sugar, vinegar, and pectin doing exactly what they're supposed to do. The water bath canning process locks in that gorgeous glossy set and gives you shelf-stable jars you can tuck away for months or hand off as gifts. Following the full rolling boil and precise one-minute pectin timing is the real secret to getting that satisfying, jiggly set every single time. Once you've made a batch from scratch, the store-bought stuff simply won't compare.

Sterilize 6 half-pint (8 oz) mason jars by submerging them in a water bath canner or large stockpot filled with water, bringing to a boil, and boiling for 10 minutes. Keep the jars in the hot water until ready to fill. Place the lids in a small saucepan of hot (not boiling) water to soften the sealing compound.
Pulse the red bell pepper, green bell pepper, and jalapeños in a food processor until very finely minced — pieces should be no larger than 1/8 inch. Measure the minced peppers after processing; you need exactly 1 1/2 cups red bell pepper, 1/2 cup green bell pepper, and 1/2 cup jalapeño. Adjust quantities as needed.
