Pat the duck completely dry inside and out with paper towels. Combine the kosher salt and five-spice powder and rub the mixture all over the skin and inside the cavity. Place the duck breast-side up on a roasting rack set over a rimmed pan and refrigerate, uncovered, for at least 8 hours or overnight, until the skin feels dry and papery to the touch.
When ready to cook, remove the duck from the refrigerator and let it sit at room temperature for 30 minutes. Preheat the oven to 425°F (220°C).
