Delicate sole fillets deserve a sauce that matches their elegance, and this pan-seared preparation delivers exactly that. The fish gets a quick, high-heat sear in coconut oil until the edges turn golden and the flesh flakes at the gentlest press — simple technique, stunning result. The real magic happens when refined coconut oil is coaxed into a deep amber brown butter, filling the kitchen with a nutty, almost caramel-like aroma before lemon juice and fresh parsley are stirred in to brighten everything up. Capers add a briny little punch if you're in the mood for it, but the sauce is gorgeous either way. Since the entire dish is built around fresh fish, coconut oil, and a handful of pantry staples, there's no need to scan labels for hidden poultry-derived ingredients or worry about what's lurking in a pre-made sauce. It's the kind of weeknight dinner that looks and tastes like you put in far more effort than you actually did. Serve it immediately with a squeeze of lemon and let the sauce do all the talking.

Pat the sole fillets thoroughly dry with paper towels, then season both sides evenly with the salt and black pepper.
Heat 1 tbsp of the coconut oil in a 12-inch stainless steel or cast iron skillet over medium-high heat until the oil shimmers and a drop of water flicked in sizzles immediately. Add 2 fillets in a single layer and cook undisturbed for 2–3 minutes, until the underside is golden and the edges are opaque. Carefully flip with a fish spatula and cook for 1–2 minutes more, until the fish reaches an internal temperature of 145°F (63°C) and flakes easily when pressed. Transfer to a warm plate and tent loosely. Repeat with the remaining 1 tbsp coconut oil and 2 fillets.
