Bright, zesty, and deeply satisfying, this pan-fried snapper delivers a golden, crackling skin and tender, flaky flesh that feels genuinely restaurant-worthy. A warm turmeric-kissed spice rub gives the fillets gorgeous color before they hit the hot skillet, and the whole thing comes together with nothing but fresh, naturally wheat-free ingredients — no swaps or substitutions needed. The real magic happens after the fish comes out of the pan: garlic and red pepper flakes bloom in olive oil, then fresh orange and lemon juices go in to lift all those caramelized bits into a silky, vibrant sauce. That citrus pan sauce is bright enough to cut through the richness of the fish while still feeling luxurious spooned over the top. Because every single component here — from the spices to the fresh-squeezed juice to the parsley — is inherently grain-free, there's no label-reading stress or ingredient hunting involved. It's the kind of weeknight dinner that looks and tastes like you put in far more effort than you actually did.

Pat the snapper fillets completely dry with paper towels. In a small bowl, combine the salt, black pepper, and turmeric, then season both sides of each fillet evenly with the spice mixture.
Heat 2 tablespoons of the olive oil in a 12-inch stainless steel or cast iron skillet over medium-high heat until shimmering. Add the fillets skin-side down, pressing each gently with a fish spatula for the first 30 seconds to prevent curling. Cook undisturbed for 4–5 minutes, until the skin is deep golden and crisp and the flesh is opaque about two-thirds of the way up the sides.
