Pat the snapper fillets completely dry with paper towels. In a small bowl, combine the salt, black pepper, and turmeric, then season both sides of each fillet evenly with the spice mixture.
Heat 2 tablespoons of the olive oil in a 12-inch stainless steel or cast iron skillet over medium-high heat until shimmering. Add the fillets skin-side down, pressing each gently with a fish spatula for the first 30 seconds to prevent curling. Cook undisturbed for 4β5 minutes, until the skin is deep golden and crisp and the flesh is opaque about two-thirds of the way up the sides.
