There is something deeply luxurious about truffle ghee, and making it from scratch means you know exactly what went into every golden, fragrant spoonful. Store-bought flavored oils and specialty spreads are notorious for hiding synthetic flavor compounds, so starting with real butter and actual black truffle is the only way to guarantee you're getting the genuine thing. The process of slowly cooking the butter until the milk solids turn lightly golden and the fat runs clear is meditative and deeply satisfying — and the result is a shelf-stable, clarified fat with serious depth. Once the ghee cools to the right temperature, real sliced or minced black truffle and truffle oil are stirred in, letting the aromatics bloom without scorching. Sea salt ties everything together and keeps the flavor clean and forward. The finished jar is stunning — amber-gold and heady with earthy, umami-rich truffle — and it will elevate everything from scrambled eggs to roasted vegetables to a simple piece of crusty bread. Keep a jar in the fridge and you'll find yourself reaching for it constantly.

Cut the butter into roughly 1-inch pieces and place in a small saucepan over medium-low heat. Let it melt completely without stirring, then reduce the heat to low.
Cook the melted butter over low heat, undisturbed, until the white milk solids sink to the bottom and turn lightly golden, and the surface foam subsides, about 20–25 minutes. The liquid fat should be clear and amber-gold. Remove from heat.
