This cocktail brings serious heat and brightness to happy hour without a single spice blend or seasoning packet in sight. The star of the show is a quick jalapeño honey syrup — made by steeping fresh chili slices in warm honey and water — which delivers a clean, natural kick that you can dial up or down depending on whether you leave the seeds in. Fresh lime juice and a splash of orange juice keep things vibrant and citrusy, while 100% agave blanco tequila ties it all together in a way that feels genuinely elevated. Because every ingredient here is whole and unprocessed, you never have to second-guess what's actually in your glass. Shaking it hard over ice gives you that perfectly chilled, slightly frothy texture that makes a great margarita so satisfying. A flaky sea salt rim is optional but highly recommended — it rounds out the sweet heat beautifully. Mix up a batch for a crowd or keep it to two glasses for a weeknight treat that feels anything but ordinary.

Combine the honey, water, and jalapeño slices in a small saucepan over medium heat, stirring until the honey fully dissolves, about 2–3 minutes. Remove from heat and let the jalapeño steep for 5 minutes, then strain out the slices through a fine-mesh strainer. Let the syrup cool to room temperature before using.
If rimming the glasses, spread a thin layer of flaky sea salt on a small flat plate. Run a lime wedge around the rim of each rocks glass, then press the rim into the salt to coat. Fill each glass with ice.
