Breakfast hash doesn't get nearly enough credit as a serious, satisfying meal, and this skillet version is here to change that. Sweet potato cubes get golden and caramelized in a cast iron pan, while smoky, spiced chicken thighs cook up juicy and deeply flavorful alongside roasted red peppers and a handful of tart Granny Smith apple. That apple might sound unexpected, but it adds a bright, slightly sweet contrast that makes every bite more interesting. The whole thing comes together with avocado oil and a spice blend of smoked paprika, cumin, and garlic powder — nothing processed, nothing hidden, just real ingredients doing real work. It's the kind of one-pan breakfast that makes four servings feel almost too easy, and it holds up just as well reheated for a quick weekday morning. Scatter some fresh parsley on top before serving and it looks as good as it tastes.

To roast the peppers, place them directly over a gas burner on high heat or under a broiler, turning with tongs every 2–3 minutes, until the skin is charred and blistered on all sides, about 10–12 minutes total. Transfer to a bowl, cover tightly with a plate or plastic wrap, and let steam for 10 minutes. Peel off the charred skin, remove the seeds, and cut the flesh into 1/2-inch strips. Set aside.
In a large bowl, toss the diced chicken thighs with the smoked paprika, garlic powder, cumin, black pepper, and 1/2 tsp of the salt until evenly coated.
