Dried smoked paprika can sometimes contain mold toxins, but the small amount in this recipe—about 1/4 teaspoon per serving—is likely tolerated by many. When possible, use a recently purchased organic spice and store it tightly closed in a cool, dry place. If you prefer to always avoid smoked paprika, please tap it and change its rating to Red.

Dried black pepper can sometimes contain mold toxins, but the small amount in this recipe—about a pinch per serving—is likely tolerated by many. When possible, use a recently purchased organic spice and store it tightly closed in a cool, dry place. If you prefer to always avoid black pepper, please tap it and change its rating to Red.
To roast the peppers, place them directly over a gas burner on high heat or under a broiler, turning with tongs every 2–3 minutes, until the skin is charred and blistered on all sides, about 10–12 minutes total. Transfer to a bowl, cover tightly with a plate or plastic wrap, and let steam for 10 minutes. Peel off the charred skin, remove the seeds, and cut the flesh into 1/2-inch strips. Set aside.
In a large bowl, toss the diced chicken thighs with the smoked paprika, garlic powder, cumin, black pepper, and 1/2 tsp of the salt until evenly coated.
