Creamy, fruity, and completely no-bake, this dessert delivers everything you love about a classic cheesecake without a single grain, dairy product, or refined sugar in sight. The crust comes together from raw almonds and pitted Medjool dates pulsed in a food processor — naturally sweet, slightly chewy, and pressed right into the pan without any baking required. Soaked cashews blended with full-fat coconut milk and coconut oil create a filling that is genuinely silky and rich, with fresh lemon juice and vanilla adding that bright, tangy note that makes it taste unmistakably like cheesecake. A honey-kissed strawberry topping cooked down until glossy and thick takes the whole thing over the top. The hardest part is honestly just waiting for it to set in the freezer. With 10 servings, it's a showstopper for dinner parties, summer gatherings, or any occasion where you want to prove that eating clean doesn't mean eating boring. Pull it out of the freezer, let it rest for a few minutes, and watch it disappear.

Line the bottom of a 9-inch springform pan with a round of parchment paper. Place the almonds in a food processor and pulse 8–10 times until coarsely chopped — pieces should be roughly pea-sized, not a fine powder.
Add the pitted dates and 1/4 tsp sea salt to the food processor with the almonds. Process continuously for 30–45 seconds until the mixture clumps together and holds its shape when pressed between two fingers. If it crumbles, process for another 10 seconds.
