Classic margaritas are already a crowd-pleaser, but this version swaps refined sugar for a quick honey syrup that adds a subtle floral sweetness you'll want in every sip. The syrup comes together in just a couple of minutes on the stovetop ā honey and water stirred until smooth ā and it makes all the difference in rounding out the bright, tart citrus. Fresh lime juice and a splash of fresh orange juice do the heavy lifting here, so nothing feels artificial or overly sweet. A solid pour of 100% agave blanco tequila keeps things clean and high-quality from the first shake to the last sip. Shaking it hard over ice until the shaker frosts on the outside is the move that gives you that perfectly chilled, slightly diluted balance. A salt-rimmed rocks glass and a lime wedge on the side make it feel like something you'd order at a really good restaurant ā except you made it at home in under ten minutes.

Combine the honey and water in a small saucepan over medium-low heat, stirring until the honey is fully dissolved, about 2 minutes. Remove from heat and let cool for 2ā3 minutes before using. You will have about 3 tbsp of honey syrup; use 1 1/2 tbsp for this recipe and reserve the rest.
If rimming the glasses, run a lime wedge around the rim of each rocks glass, then press the rim into a small plate of coarse salt to coat.
