Homemade ghee is one of those kitchen projects that feels almost too simple for how impressive the results are. Butter is slowly simmered until the milk solids turn golden and the fat becomes this gorgeous, nutty, clarified liquid — and infusing it with garlic, thyme, rosemary, parsley, and a little lemon zest takes it somewhere truly special. Because the milk solids are cooked out and strained away through cheesecloth, what you're left with is pure, clean fat that fits comfortably within a paleo framework and skips any of the usual dairy concerns. There's no turmeric or warming spice blends involved here — just herbs, aromatics, and good butter doing exactly what they're supposed to do. The lemon zest stirred in at the end adds a brightness that keeps the whole thing from feeling heavy, making it as good on roasted vegetables as it is melted over a piece of grilled meat. Once it sets and turns opaque in the jar, you'll have a pantry staple that keeps for weeks at room temperature or even longer in the fridge. It's the kind of thing you'll want to make in batches once you realize how much better everything tastes with a spoonful of it.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
