Homemade ghee is one of those kitchen projects that feels almost meditative — slowly watching butter transform into something golden, nutty, and deeply aromatic. This version layers in smashed garlic, fresh thyme, and rosemary during the clarifying process, so the fat absorbs all that savory, herby goodness before the solids are ever strained away. A finishing stir of chopped parsley, bright lemon zest, and sea salt takes it somewhere truly special. Because ghee is made by cooking off the milk solids from butter, it fits comfortably within a paleo framework and sidesteps the dairy proteins that can be problematic for some eaters. Store-bought flavored butters and spreads can be a minefield of unexpected additives and shared-facility warnings, but this one is built from a short, clean ingredient list you can verify yourself. Spread it over roasted vegetables, melt it onto grilled meat, or use it as your go-to cooking fat for anything that deserves a little extra richness. It keeps at room temperature for two weeks or in the fridge for two months, so one batch goes a surprisingly long way.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
