Homemade ghee is one of those kitchen projects that feels almost alchemical — you start with plain butter and end up with something deeply golden, nutty, and shelf-stable that elevates everything it touches. Because the milk solids are cooked out and strained away through cheesecloth, what remains is pure clarified butterfat, which is exactly what makes this approach so clean and straightforward from an ingredient standpoint. Garlic, fresh thyme, rosemary, parsley, and a bright hit of lemon zest are all stirred in at just the right moment, so the finished jar is fragrant and complex without a single additive or preservative in sight. Store-bought flavored butters and cooking fats often come loaded with synthetic stabilizers and mystery "natural flavors," but here you know exactly what went into the pot. The slow simmer is where the magic happens — those 20 to 25 minutes over low heat coax out a deep, toasty aroma that plain butter simply cannot match. Use it to sear vegetables, finish a steak, toss with roasted potatoes, or just melt a spoonful over a bowl of soup. Once you have a jar of this on the counter, it becomes the first thing you reach for.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
