Butter transformed into something truly special — that's exactly what happens when you slowly simmer unsalted butter with smashed garlic, fresh thyme, and rosemary until the milk solids turn golden and the whole kitchen smells incredible. The clarifying process removes the milk solids entirely, leaving behind a rich, shelf-stable cooking fat that's pure, clean, and completely free from the sweeteners and additives that sneak into so many store-bought spreads and flavored oils. A finishing stir of chopped parsley, lemon zest, and sea salt gives this ghee a bright, herbaceous lift that makes it so much more than a basic cooking fat. Spread it on roasted vegetables, melt a spoonful over a seared steak, or use it anywhere you'd reach for butter — the depth of flavor is genuinely next level. Because every single ingredient here is whole and unprocessed, you never have to squint at a label or wonder what's hiding in the bottle. The slow, gentle simmer is the only technique that matters, and the payoff is a jar of golden, fragrant ghee you'll want to keep on your counter at all times.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
