Clarified butter is already a pantry hero, but infusing it with garlic, fresh thyme, rosemary, parsley, and a hint of lemon zest takes it somewhere truly special. The slow simmer over low heat does two important things at once: it drives off the milk solids that can cause digestive issues for some people, and it lets the aromatics bloom deep into the fat for a flavor that store-bought ghee simply cannot match. Watching those milk solids turn golden on the bottom of the pan is genuinely satisfying — that's the moment you know the butter has transformed into something richer and more complex. Because every ingredient here is naturally free of grains and gluten-containing additives, there's no label-reading anxiety and no substitutions required. The finished ghee sets into a soft, fragrant spread that's equally at home melted over roasted vegetables, stirred into cauliflower mash, or used as a finishing drizzle on grilled meat. A little goes a long way, and a sealed jar on the counter means you're never more than a spoonful away from making any dish taste more luxurious.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
