Homemade ghee is one of those kitchen projects that feels almost meditative — slow, fragrant, and deeply satisfying once you see that golden, clarified fat come together. This version goes a step further by infusing the butter with smashed garlic, fresh thyme, and rosemary as it cooks, so the finished product carries a savory, herbaceous depth that plain ghee simply can't match. Because the milk solids are cooked out and strained away through cheesecloth, what you're left with is pure, shelf-stable fat that fits naturally into a grain-free, whole-foods approach to eating. A finishing stir of chopped parsley, lemon zest, and sea salt added while the ghee is still warm gives it a bright, almost compound-butter quality that makes it incredibly versatile. Spread it on roasted vegetables, melt it over a seared steak, or use it as your go-to cooking fat whenever you want a little extra flavor without reaching for anything processed. The whole process takes patience but very little hands-on effort, and the payoff — a jar of glossy, herb-flecked ghee sitting on your counter — is genuinely worth it. It keeps at room temperature for two weeks or in the fridge for up to two months, so one batch goes a long way.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
