Homemade ghee is one of those kitchen projects that feels almost meditative — slowly watching butter transform into something golden, nutty, and deeply aromatic. This version layers in smashed garlic, fresh thyme, rosemary, parsley, and a bright hit of lemon zest, making it far more interesting than anything you'd find on a store shelf. Speaking of store shelves, commercial flavored butters and finishing oils can be surprisingly tricky territory, with dyes and synthetic flavor enhancers sneaking into ingredient lists you'd never expect. Making your own means every single thing going into the jar is something you chose and can see. The slow simmer does the real work here — the milk solids caramelize at the bottom of the pan while the herbs turn fragrant and slightly crisp, and then everything gets strained clean through cheesecloth so only pure, clarified fat and fresh flavors remain. The result is a rich, spreadable ghee that's incredible melted over roasted vegetables, stirred into cauliflower mash, or simply swiped onto a warm piece of paleo-friendly bread. A batch keeps at room temperature for two weeks or in the fridge for two months, so you'll have it on hand whenever a dish needs a little something extra.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
