Homemade ghee is one of those kitchen projects that feels almost meditative — slow, fragrant, and deeply satisfying once you see that golden, clarified fat come together. This version layers in smashed garlic, fresh thyme, rosemary, parsley, and a bright hit of lemon zest, so the finished product is anything but plain. Store-bought flavored butters and cooking fats often sneak in natural flavor extracts or artificial additives that are hard to track down on a label, but here every single ingredient is whole and real — nothing processed, nothing synthetic. The milk solids are cooked out and strained away through cheesecloth, which is exactly what makes ghee such a clean, shelf-stable fat that works beautifully for high-heat cooking or simply spread over roasted vegetables. Watching the butter transform over low heat — the foam rising, the solids turning golden, the herbs crisping at the edges — is genuinely one of the more rewarding things you can do on a slow afternoon. Once it sets into that soft, opaque, herb-flecked jar, you'll want to put it on absolutely everything.

Place the butter, smashed garlic cloves, thyme sprigs, and rosemary sprigs in a small saucepan over medium-low heat. Let the butter melt completely, then reduce the heat to low.
Cook the butter at a gentle simmer, stirring occasionally, until the milk solids on the bottom of the pan turn golden and the foam on the surface subsides, 20–25 minutes. Watch closely during the last 5 minutes — the solids can go from golden to burnt quickly. The garlic will soften and turn lightly golden at the edges; the herbs will become fragrant and slightly crisp.
