Add the almonds and pecans to a food processor and pulse 8–10 times until coarsely chopped and the mixture resembles rough crumbs — some larger pieces are fine.
Add the pitted dates, almond butter, vanilla extract, cinnamon, and sea salt to the food processor. Process continuously for 45–60 seconds, stopping once to scrape down the sides, until the mixture clumps together and pulls away from the bowl walls. It should hold its shape when pressed between your fingers.
