Rich, silky, and deeply savory, this chicken liver pâté is the kind of appetizer that makes people think you spent all day in a French kitchen. Searing the livers hot and fast in coconut oil builds a gorgeous crust and locks in flavor before everything gets blended into a velvety, spreadable texture. Shallot, garlic, fresh thyme, allspice, and nutmeg do the heavy lifting here, creating a warm, complex spice profile without a single drop of the bright yellow spice that can sneak into so many spiced blends and store-bought pâtés. A splash of dry white wine deglazes the pan and adds a subtle brightness, while avocado oil and a hit of fresh lemon juice keep the final blend smooth and balanced. The thin coconut oil cap poured over the top isn't just a pretty finishing touch — it actually seals the pâté and keeps it fresh in the fridge. This is a genuinely elegant recipe that fits a grain-free, whole-food approach without any compromise on depth or indulgence. Serve it straight from the ramekin with your favorite paleo-friendly crackers or crisp vegetables and watch it disappear.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
