Rich, silky, and deeply savory, this chicken liver pâté is the kind of appetizer that disappears fast at any gathering. Searing the livers over high heat builds a gorgeous crust and locks in flavor before everything gets blended into a velvety, spreadable texture that feels genuinely luxurious. Coconut oil and avocado oil stand in for the butter and cream you'd find in a classic French version, keeping the whole thing grain-free and dairy-free without sacrificing that luscious mouthfeel. The shallot and garlic get cooked down with white wine and fresh thyme, and warm spices like allspice and nutmeg give the finished pâté a subtle complexity that makes it taste far more involved than it actually is. A thin cap of melted coconut oil poured over the top seals in freshness and gives it that elegant, bistro-worthy presentation straight from your own fridge. Serve it with sliced vegetables, grain-free crackers, or just a spoon — no one is judging. It's a genuinely impressive make-ahead dish that proves clean, whole-food ingredients can absolutely hold their own against the classic version.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
