Rich, silky, and deeply savory, this chicken liver pâté is the kind of appetizer that makes guests think you spent all day in a French kitchen. Every ingredient here is whole and recognizable — coconut oil, avocado oil, fresh shallot, garlic, thyme, and a splash of white wine or apple cider vinegar — so you can feel genuinely confident about what you're spreading on your plate. That matters a lot when you're avoiding synthetic preservatives and additives that sneak into so many store-bought pâtés and processed spreads. The livers get a proper hard sear before everything is blended into a completely smooth, luxurious texture, and the warm spices — allspice and nutmeg — give it a subtle depth that keeps people coming back for another scoop. A thin cap of melted coconut oil poured over the top seals in freshness the old-fashioned way, no artificial stabilizers needed. Serve it straight from the ramekin with fresh thyme on top and let the simplicity of real, clean ingredients do all the talking.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
