Chicken liver pâté has a reputation for being rich, indulgent, and a little intimidating — but this version is genuinely approachable and delivers serious depth of flavor. The livers are seared hard for a deep brown crust before being blended silky-smooth with sautéed shallot, garlic, and warm spices like allspice and nutmeg, which give the finished spread a subtle, almost floral complexity. A splash of white wine deglazes the pan and lifts all those caramelized bits into the mix, while avocado oil and a hit of fresh lemon juice keep the texture luxuriously creamy without any dairy. A thin cap of melted coconut oil poured over the top seals in freshness and gives it that classic bistro presentation right in your own kitchen. This fits beautifully within a whole-foods, Mediterranean-leaning approach to eating — organ meats are one of the most nutrient-dense proteins you can put on the table, and every ingredient here is clean and purposeful. Serve it straight from the ramekin with crudités, grain-free crackers, or sliced cucumber for a starter that looks far more impressive than the effort involved.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
