Rich, silky, and deeply savory, this chicken liver pâté is the kind of spread that turns a simple snack into something genuinely impressive. Every ingredient here is whole and clean — coconut oil, avocado oil, fresh aromatics, and a splash of dry white wine or apple cider vinegar — so there's no hidden sweetener or processed filler to worry about. The technique is straightforward: sear the livers hard for a deep brown crust, build flavor with shallot, garlic, and thyme, then blend everything into a velvety, spiced paste that tastes far more luxurious than the effort involved. Allspice and nutmeg give it a warmth that sets it apart from bland store-bought versions, which often sneak in corn syrup solids or other additives to extend shelf life. A thin cap of melted coconut oil poured over the top seals in freshness and gives the finished ramekins that classic, restaurant-worthy look. It firms up beautifully in the fridge and is ready to serve whenever you are — just add a garnish of fresh thyme and let it speak for itself.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
