Rich, silky, and deeply savory, this chicken liver pâté is the kind of spread that makes a simple cracker or slice of cucumber feel genuinely special. Traditional pâté recipes often rely on gelatin to achieve that smooth, set texture — but this version skips it entirely, using a thin cap of melted coconut oil to seal and protect the surface instead. The result is a beautifully firm, sliceable pâté that holds its shape without any animal-derived setting agents. Shallot, garlic, fresh thyme, allspice, and nutmeg layer in warmth and complexity, while a splash of white wine deglazes the pan and lifts every last bit of caramelized flavor into the mix. Avocado oil and a hit of lemon juice blended in at the end give the finished pâté a luxuriously smooth consistency and a subtle brightness that keeps it from feeling heavy. It comes together in a food processor, so the technique is far more approachable than the elegant presentation suggests. Spoon it into ramekins, let it chill until firm, and you have an impressive appetizer or snack that's as clean and wholesome as it is indulgent.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
