Chicken liver pâté has a reputation for being fussy or rich in ways that don't always sit well with sensitive digestive systems, but this version keeps things clean and genuinely satisfying. The livers are seared hard for deep, caramelized flavor, then blended with sautéed shallot, garlic, fresh thyme, and warm spices like allspice and nutmeg into something impossibly silky. Coconut oil and avocado oil replace the butter and cream you'd find in a classic French preparation, which means no hidden dairy and no high-fructose ingredients sneaking in through the back door. A splash of dry white wine or apple cider vinegar lifts the whole thing and gets cooked down until the pan is nearly dry, so you're left with depth rather than sharpness. The thin coconut oil cap poured over the top isn't just a pretty finishing touch — it seals in freshness and keeps the pâté tasting its best straight from the fridge. Spread it on cucumber rounds, crisp endive leaves, or anything else you have on hand for an appetizer that feels genuinely luxurious without any of the usual ingredient compromises.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
