Rich, silky, and deeply savory, this chicken liver pâté delivers the kind of old-world elegance you'd expect from a French bistro — without a single drop of butter or cream in sight. Coconut oil does double duty here, both as the fat for searing and as a gorgeous, golden seal poured over the top of each ramekin to lock in freshness. Avocado oil blended right into the mix gives the finished pâté that luxuriously smooth, spreadable texture that traditional recipes usually rely on heavy dairy to achieve. Shallot, garlic, fresh thyme, allspice, and nutmeg build layers of warm, aromatic flavor that make this taste far more complex than the short ingredient list suggests. A splash of dry white wine or apple cider vinegar deglazes the pan and lifts all those caramelized bits into the mix, adding a subtle brightness that keeps the richness in check. The food processor does the heavy lifting at the end, so you get a completely smooth, restaurant-worthy result with minimal fuss. Serve it chilled straight from the ramekin with your favorite crackers or crudités, and don't skip the fresh thyme garnish — it makes the whole thing look stunning.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
