Rich, silky, and deeply savory, this chicken liver pâté is the kind of appetizer that makes guests think you spent all day in a French bistro kitchen. The livers are seared hard for a deep brown crust before being blended with sautéed shallot, garlic, and warm spices like allspice and nutmeg, giving the finished spread a complexity that's genuinely hard to put down. Coconut oil and avocado oil stand in for butter, keeping the whole thing grain-free and dairy-free without sacrificing that luscious, spreadable texture. A splash of white wine or apple cider vinegar lifts the richness, while a squeeze of fresh lemon juice at the end keeps every bite bright and balanced. The thin coconut oil cap poured over the top isn't just a pretty finishing touch — it seals in freshness and gives the pâté that classic, elegant look straight out of a charcuterie spread. Since every ingredient here is naturally free of coffee, tea, and any other stimulants, you can serve this confidently at any gathering without a second thought. Pile it onto cucumber rounds, grain-free crackers, or crunchy vegetables and watch it disappear.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
