Rich, silky, and deeply savory, this chicken liver pâté is the kind of appetizer that makes guests think you spent all day in a French kitchen. Every ingredient here is whole and recognizable — chicken livers, coconut oil, shallot, garlic, fresh thyme, warming spices, and a splash of white wine — so there's no mystery about what you're actually eating. That matters more than people realize, because conventional pâtés and processed spreads can hide a surprising number of additives, dyes, and preservatives behind a polished label. Here, the gorgeous deep color comes entirely from properly seared livers and nothing else. The technique is straightforward: sear the livers until just barely pink at the center, build a quick aromatic base in the same pan, then blend everything smooth with avocado oil and a hit of lemon juice for brightness. A thin cap of melted coconut oil poured over the top seals in freshness and gives it that classic, elegant finish. Serve it straight from the ramekin with your favorite grain-free crackers or crudités and watch it disappear.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
