Chicken liver pâté has a reputation for being rich, indulgent, and — in most restaurant or store-bought versions — loaded with butter, cream, and sometimes a touch of sweetened wine or fruit preserves to balance the flavor. This version skips all of that and still delivers something genuinely luxurious. Coconut oil and avocado oil stand in for the dairy, giving the finished pâté a silky, smooth texture that spreads beautifully without any of the ingredients you're trying to avoid. A splash of dry white wine or apple cider vinegar deglazes the pan and lifts all those caramelized bits, adding depth and a subtle brightness that makes the whole thing taste far more complex than the ingredient list suggests. Warm spices like allspice and nutmeg round out the flavor alongside fresh thyme, so every bite feels layered and aromatic. The thin coconut oil cap poured over the top before chilling isn't just a classic French technique — it also seals in freshness and makes for a beautiful presentation straight from the fridge. Serve it with crisp vegetables, grain-free crackers, or anything else you love to dip, and don't be surprised when it disappears fast.

Pat the chicken livers dry with paper towels. Heat 1 tbsp of the coconut oil in a large skillet over medium-high heat until shimmering.
Add the chicken livers in a single layer and sear undisturbed for 2–3 minutes, until the undersides are deep brown. Flip and cook for another 2 minutes, until the livers reach 165°F (74°C) on an instant-read thermometer at the thickest part and are just barely pink at the center. Transfer to a plate and set aside.
