Add the chicken strips and toss to coat evenly. Cover and marinate at room temperature for 30 minutes, or refrigerate for up to 4 hours.
Heat a large (12-inch) cast iron skillet or heavy skillet over high heat until very hot, about 2 minutes. Add the remaining 1 tablespoon avocado oil and swirl to coat. Add the bell peppers and onion in a single layer and cook, stirring only once or twice, until the edges are charred and the vegetables are just tender, 5–6 minutes.
